I just realized something amazing. I, the same girl that 3 months ago was struggling to eat even ONE proper vegetable a day, have eaten an entire rainbow of produce today.
Red- Tomatoes in my cabbage casserole and minestrone soup, kidney beans in my soup
Orange- Carrots in my soup, raw carrots as a snack
Yellow- Peaches in my smoothie
Green- Spinach in my salad and soup, zucchini in my soup
Blue- Blueberries in my smoothie
Purple- Purple leaves in my salad, purple cabbage in my salad
White- Onion in my soup, regular cabbage in my soup and casserole, garlic in my soup
Brown- Brown pear as a snack
Black- Black beans in my turkey wrap
This is amazing. I literally ate a rainbow today. And it was delicious!
